We brought the wine. Alex and Aki had the cheese. Some of life's greatest pleasures occur purely by happenstance. This was one. The 1990 Grande Dame Champagne from Veuve Clicquot Ponsardin was wonderful on its own as was the exquisite 2 year aged Rembrandt Gouda from DiBruno Brothers, but together, they were pure magic! The yeastiness from the champagne picked up on the deep umami of the gouda and didn't let go. They melded seamlessly, a tremendous balance of intense flavor and texture.
