When I wrote how much I love goose eggs, my friend @tanabutler tweeted that she prefers duck eggs and made a suggestion for serving them over easy on sauteed spinach with a drizzle of truffle oil. I have duck eggs and fresh spinach at the moment, but no truffle oil, so I substituted wasabi oil. Pretty tasty, though I think the truffle oil would have been a little better. As for duck vs. goose eggs, I think I still prefer goose, though I wouldn't turn duck eggs away.
i often use duck eggs for pasta, they are also crumbled over spicy greens. thanks for the great blog
