Two giants of the Peruvian (and international) restaurant scene were present at Madrid Fusión. To the left is Arturo Rubio, owner of the spectacular restaurant Huaca Pucllana, located on the site of ancient pre-Incan ruins in Lima. To the right is Gaston Acurio, owner of the famous Limeño restaurant Astrid y Gaston that has evolved into a number of restaurants of the same name in various parts of the world (I ate at the madrid branch last year) as well as a number of other restaurants known on a global scale including the La Mar cebicherías.
De La Mar, his cebecheria in Barranco, a suburb of Lima, is absolutely extraordinary. Best ceviche of my life.

Unfortunately when I was in Peru we had less than a day in Lima and we missed both Astrid y Gaston and La Mar. We did have lunch at Huaca Pucllana though, which was a revelation. To date, the best ceviche I have had was at an out of the way place in mountainous Cuzco - spectacular!
